Yields 1.5 Cups
- 4 bunches Fresh Basil
- 3 garlic cloves, minced
- 1 Tbsp Lemon Juice 6 Tbsp Pine Nuts
- 1/2 tsp Crushed Red Pepper 1 tsp Kosher Salt 1/2 tsp Fresh Ground Black Pepper
Blanch basil leaves by adding to a pot of boiling water for 10 seconds and immediately placing basil leaves into an ice bath to stop cooking. Blanching will help retain the green color of basil leaves to stay vibrant longer. If that is not a concern, skip this step Remove basil leaves from ice bath and add to a blender or food processor with remaining ingredients and blend until smooth.
Add pesto on top of your favorite soft cheese and serve with Rustic Bakery Flatbreads, Flatbread Bites or baguette.
