Strawberry Shortbread Cookie Bites
Ingredients
- Rustic Bakery Meyer Lemon Shortbread or Vanilla Bean Shortbread
- Fresh strawberries, sliced
- Heavy whipping cream
- Vanilla Extract
Instructions
Adding vanilla to taste, whip the cream in a chilled bowl until soft peaks form. Layer whipped cream and sliced strawberries between two shortbread cookies. Add a second layer if desired and finish with a light dusting of powdered sugar.
Tip: Crush a different Rustic Bakery shortbread flavor and sprinkle it between the layers or on top for added texture and a unique flavor twist.
