The Bite
Creamy ricotta softens the heat of the N’duja, while Red Wine & Cracked Pepper Jelly introduces a touch of sweetness. The jelly plays against the N’duja’s smokiness to create an almost barbecue-like flavor, while the Artisan Crisp and fresh thyme add fruit, texture and an aromatic finish.

The Wine
Clif Family 2022 Valle di Sotto Zinfandel
The N’duja’s gentle smokiness complements the wine’s fruit-forward character and subtle earthiness. Creamy ricotta rounds out the spice, allowing the Zinfandel and every layer of the bite to remain balanced. The wine comes from Clif Family’s Oak Knoll vineyard, which is certified organic, farmed regeneratively and planted with twelve grape varieties.
